Time: 35 minutes

Equipment: 12" Lodge Cast Iron Skillet

Ingredients

  • 3-4 chicken breasts 
  • 8 oz. jar of sun dried tomatoes 
  • 14 oz. goat cheese
  • Spice House Italian Herb Seasoning
  • 3 tablespoons red wine vinegar
  • 1/2 cup white wine
  • 2 limes
  • 3 tablespoons butter
  • 3 garlic cloves minced
  • 3 tablespoons diced onions
  • 1/2 cup fresh bail
  • 1/4 cup fresh parsley
  • 1/2 cup chicken broth
  • 1/2 cup chopped Parsley
  • Sea Salt
  • Olive Oil 

 Step 1: Pound chicken breasts to 1" thickness and season with Spice House Italian Herb blend & salt

Step 2: Heat 2 tablespoons of olive oil in skillet. 

Step 3: Brown & cook chicken breasts in skillet, each side roughly 6-8 minutes. Remove and set aside.

Step 4: In a large mixing bowl, begin to build the Lime & Sun Dried Tomato Sauce - Add sun dried tomatoes, freshly squeezed lime, olive oil, minced garlic, onions, basil, parsley, butter, chicken broth and mix in bowl.

Step 5: Pour half of the Lime & Sun Dried Tomato Sauce into the Cast Iron Skillet, and place the cooked chicken breasts atop the sauce. Then, infuse the chicken breasts with the red wine vinegar, white wine, and fresh lime juice and cover for 5 minutes

Step 7: Plate chicken and garnish with a scoop of goat cheese, then add the remainder of the Lime & Sun Dried Tomato Sauce. Lastly, place chopped cilantro and squeeze fresh lime over chicken.
