Egg Hash Breakfast Skillet Recipe

Breakfast. The most important meal of the day.  Love yourself, quell your hunger pains, & supercharge your day with this simple egg hash breakfast skillet! (Serves 2)


  • 4 large eggs
  • 2 large yukon gold potatoes, diced 
  • 1 poblano or red pepper, chopped
  • 1 cup bacon, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 4 tablespoons olive oil
  • 1 can black beans
  • 1/2 yellow onion chopped
  • 1/2 cup cilantro, chopped
  • 2 cups pepperjack cheese
  • Salt and pepper to taste

Step 1: Preheat oven to 425 degrees F. 

Step 2: Cook bacon until crispy with oven-safe skillet.

Step 3: Remove cooked bacon, while leaving enough bacon fat to coat skillet and add diced potatoes. Cook potatoes on medium heat for about 15 minutes until tender. Season with salt & pepper. 

Step 4: Remove potatoes from skillet & sauté chopped onions, jalapeno, poblano/ red pepper. 

Step 5: Add potatoes back to skillet and mix with sauteed veggies. Spread black beans evenly on top of potatoes and veggies.

Step 6: Crack 4 eggs over top of skillet mixture. Spread cheese evenly over skillet.

Step 7: Bake in oven for 10 minutes or until eggs are cooked. 

Step 8: Remove from oven and garnish with chopped cilantro.
